Eggplant or aubergine is known for its unique taste and is also a host of vitamins, minerals, phytonutrients, and flavonoids such as nasunin. Nasunin is a free radical scavenger that protects cell membranes from damages.It also functions as an anti-inflammatory compound. Studies show that consumption of flavonoid-rich foods even in small quantities benefits our heart health, helps lower blood cholesterol, prevents tumor growth and spread of cancer cells, and aids in cognitive function.
